The star of the Rosh Hashanah meal is usually the main dish: an impressive roast, perhaps a beautiful chicken dish, a whole head of cauliflower or a slow simmered brisket. Honey cake is not exactly known for its sexy curb appeal, nor is apple cake, but they are comforting classics that often grace American-Jewish tables for Rosh Hashanah.
Growing up there was always honey cake on the table, and it was usually made by my great aunt Ruth….sometime in June. She then froze it, at some point defrosted it, sliced it, and then froze it once again. Needless to say, by the time September rolled around and we gathered at my grandmother’s house in Yonkers, the honey cake left something to be desired.
